Check out http://airshowmodels.com new web site. The owner is a 747 driver who does this as a side. I have built the Christen Eagle model and am ordering the Bulldog Pitts.

The kits take some work (not too much) but look great!

I'm not really all that interested in model airplanes (no blasphemy intended!), but I have been looking for a model with moveable control surfaces, for chair-flying purposes. The best thing I have found so far is a crummy cardboard-construction, 172 look-alike- but it does have moveable control surfaces. Would one of these models work for me?

No. Would take too much work.

I'll have to dig around in my brain but I recall some "basic" wood models with hinged control surfaces at Oshkosh for that type of visualization.

If I can think of it or see any I'll post here.
